Wasabi Mashed Potatoes

ingredients
1 tablespoon garlic purée (pressed in presser or purchased in jar)
8 potatoes
2/3 cup margarine, softened
1 tablespoon wasabi powder (can be purchased at most well stocked grocery stores)
1/3-1/2 cup So Good Original soy beverage
Salt/ Pepper to taste
Water


instructions
1. Place peeled and quartered potatoes in a pot and bring to a boil until potatoes are very soft. Drain and mash with margarine until smooth and light in consistency.

2. In a small bowl, mix wasabi powder with just enough water to form a thick paste. Mash garlic and wasabi paste into potatoes, pour in So Good soy beverage and continue to mash until mixture is fluffy. Season with salt and pepper as desired.

Serves 6.
