Strawberry and Lime Syrup Crepes2 eggs 1 ½ cups So Good soy milk 2/3 cup water 1 ¼ cups white plain flour ½ cup wholemeal plain flour olive oil spray ½ cup honey Juice and grated rind from 3 limes 1 cup of strawberries, hulled and halved 1. In a large mixing bowl whisk eggs, So Good and water. Gradually whisk in the flours until smooth. 2. Heat a large non-stick frypan over a moderate heat and lightly spray with olive oil. Pour 1/3 cup of the crepe batter into the pan and tilt the pan to spread the crepe mix. Cook for about a minute each side or until golden brown. Set aside and continue cooking the remaining crepe mix. Spray the pan with extra olive oil spray as required. 3. In a small saucepan combine the honey, lime juice and lime rind. Warm over low heat for about 2 minutes to form a syrup. Add the strawberries and remove from the heat. 4. To serve, fold the crepes into quarters and top with the strawberries in lime syrup.
