Salmon Chowder3 cups (750ml) Chicken stock 1 Med. Onion 2 Carrots, chopped 3 Cloves garlic, minced 2 Stalks celery, diced 1 Lrg. red pepper, chopped 1 Lrg. potato, chopped 1 cup (250ml) Corn 12 oz (340g) Salmon fillet 1 cup (250ml) So Good Original Fortified Soy Beverage 1. In a medium pot, mix together the chicken stock, diced onion, and the chopped carrots. 2. Bring to a boil. Add the minced garlic, diced celery, chopped red pepper, chopped potato, and the corn. 3. Bring to a boil. Cover, reduce the heat to simmer, and cook for 10 min. or until the veggies are cooked. 4. Cut the salmon into 1" cubes. Add to the veggies. Cover and simmer for 5 min. or until the salmon is cooked. 5. Pour in the So Good. Heat through. Season with salt and pepper. Serve. Serves 4. |
