Caramelised Onion and Corn Bread2 tablespoons olive oil 3 onions, finely sliced 1 tablespoon brown sugar 3/4 cup polenta 1 cup brown rice flour 2 teaspoons baking powder 1/3 cup linseeds 1/4 cup psyllium husks 1 tablespoon fresh thyme 1 cup So Good soymilk 1 egg, lightly beaten 1. Pre-heat oven to 200º C. Line a loaf pan with greaseproof paper. 2. Place oil in a non-stick frying pan. Add onions and brown sugar and sauté over high heat for 5 minutes or until golden brown. 3. Place polenta, rice flour, baking powder, linseeds, psyllium husks, thyme and three quarters of the onion mixture in a large mixing bowl and stir until combined. 4. Combine So Good and egg and stir into dry ingredients. Spoon into prepared tin and press down firmly. 5. Bake for 20 minutes, top with remaining onions and bake a further 15 minutes. Slice and serve warm.
