Breakfast Burrito4 omega-3 eggs 1/4 cup (65 mL) So Good Original Fortified Soy Beverage 1 tsp (5 mL) non-hydrogenated margarine 2 large soft tortillas 2 Tbsp (30 mL) minced red pepper 1/4 cup (65 mL) salsa - mild, medium, or hot! 1. Beat together the eggs and So Good until fluffy. 2. Heat a Teflon frying pan over medium/low heat and melt the margarine. Add the So Good/eggs mixture and stir in pan until cooked. 3. Divide cooked eggs equally between the 2 tortillas. Sprinkle with minced red pepper and salsa. 4. Wrap tightly and enjoy! Makes 2 servings. |
